Ground almonds are made from ground up blanched or natural almonds. Blanched almonds that have had their skins removed before grinding are more commonly used to produce ground almonds as these are sweeter, the skin of the natural almonds can produce a slightly bitter taste. Ground almonds are the most popular flour used in gluten-free baking and have enjoyed a long tradition as an alternative to wheat flour. These have a high fat content due to their natural oils which results in a tender, moist texture. They also add a mild and rounded flavour to any recipe.
