Coconut flour is made from the dried, defatted coconut meat, left over from extracting virgin coconut oil. Once the oil is pressed out, the remaining coconut pulp is dried and finely ground into a soft, fine, naturally gluten-free flour.
The flour has a very subtle coconut aroma with a high fibre content with moderate levels of protein. It is often used in low-carb, paleo, keto, and gluten-free baking. It can also be used as a thickening agent.
